Parsley, pear and flower salad
For salad
1 bunch flat leaf parsley
1 pear
1 cup edible flowers
Remove the core from the pear and slice thinly
Roughly chop the parsley
Combine the parsley, pear and flowers and toss in dressing (note: don’t
overdress…use just enough dressing to cover the greens)
For dressing
Juice of 1 lime
1 tbsp Japanese plum vinegar
2 tbsp maple syrup
5 tbsp extra virgin olive oil
Salt and pepper to taste
Blend all ingredients together
